war ich wieder bei meiner georgischen Lieblingsfamilie in Kachetien auf dem Land. Meine Kollegin Nino hat mich zum Tschurtschchela-Machen eingeladen &#8211; man sagt hier auch &#8222;georgisches Snickers&#8220;. Das feiern die Georgier zu Silvester, wie die Deutschen Pl\u00e4tzchen zur Weihnachtszeit.<\/p>\n<p>Die Herstellung ist ziemlich aufwendig: In der Regel werden zuvor gesch\u00e4lte und sortierte Waln\u00fcsse m\u00fchsam auf dicke Baumwollf\u00e4den gef\u00e4delt, was tagelange Arbeit bedeutet. Gl\u00fccklicherweise hatten die Frauen im Dorf schon alles vorbereitet. Zur Abwechslung gab es auch ein paar Ketten mit Haseln\u00fcssen und getrockneten Fr\u00fcchten.<\/p>\n<p>Dann wird die Tatara zubereitet. Das ist mit Mehl eingedickter Traubensaft &#8211; in unserem Fall nat\u00fcrlich aus eigener Herstellung. \u00dcber der Feuerstelle wird das Ganze dann drei bis sechs Stunden erhitzt bis eine z\u00e4he, etwas verdunkelte Masse mit kleinen Bl\u00e4schen entsteht, die nicht mehr nach Mehl schmeckt. Die Tatara kann je nach Traubensorte und Kochzeit unterschiedliche Farben annehmen. Damit nichts anbrennt, musste der riesige Holzl\u00f6ffel praktisch die ganze Zeit in Bewegung bleiben. Ich sag euch: Ganz sch\u00f6ne Muskelarbeit.<\/p>\n<p>Die N\u00fcsse\u00a0 werden dann tief in die Tatara getaucht, herausgezogen und mindestens zwei Wochen zum Trocknen geh\u00e4ngt. Wir hatten ausnahmsweise statt 300 nur 170 St\u00fcck vor uns.\u00a0 Die Konsistenz ist weder frisch noch getrocknet mein Fall, aber zur Verteidigung der Nationalspeise: Ich mag auch keine Gummib\u00e4rchen.<\/p>\n<p>Nat\u00fcrlich blieb es nicht nur bei der S\u00fc\u00dfigkeit: F\u00fcr G\u00e4ste und Nachbarn wurde wie selbstverst\u00e4ndlich reichlich, gut georgisch aufgetischt und eingeschenkt. :D<\/p>\n<p>Und mal wieder habe ich nicht gemerkt, wie der Tag an mir vorbei zieht. Allein die Hinfahrt mit den sechs Kindern der georgisch-deutschen Familie von Ninos Bruder verging wie im Flug. Mal wieder ein bisschen &#8222;Teekesselchen&#8220;, &#8222;Wer bin ich&#8220; und &#8222;Ich sehe was, was du nicht siehst&#8220; spielen, ist ja auch nicht verkehrt. Von morgens bis abends habe ich im Hof gesessen, Gespr\u00e4chen gelauscht, so vor mich hin gegessen, t\u00fcrkischen Kaffee und die Gastfreundschaft genossen und mich an der Feuerstelle gew\u00e4rmt.<\/p>\n<p>Zu Hause ging es f\u00fcr meine ger\u00e4ucherten Klamotten dann erstmal in die Waschmaschine und f\u00fcr mich mit doppeltem Haarwaschgang unter die Dusche.
